Sweet Tangy Chicken (4 ingredients only)

After a long day in the office, career ladies may lack some kitchen skills so I wanted to post an easy peasy recipe for all those who need some extra help.  And this is only a 4 ingredient dish that will become one of your go-to dishes.   You can make ahead first thing in the morning up to the point of baking, place in the refrigerator, then just pop in the oven for a little over an hour, add a side and a tossed green salad.

When your done  you can serve it up and act like you are worn slap out from working so hard. Take all the compliments gracefully. You deserve it.


8 chicken thighs  – You can use a whole chicken or other parts. (Pics are thighs)

1 package dry french onion soup mix

1 (8 oz bottle) Russian dressing (I prefer Wishbone Russian dressing)

1 small jar of apricot preserves or about a cupful.


Mix all ingredients, except chicken, in a bowl.

Salt and pepper the chicken.

Pour sauce over chicken and make sure it’s coated well.

Roast uncovered at 400 degrees for 1 hour to 1 hour and 15 minutes until chicken is done. Baste several times during cooking. This is the way the chicken will look when done.

Use these in your cocktails or use these for everyday drinks! This seriously is the best idea ever! I sometimes use cucumbers instead of lemons or limes… just to get that spa feeling! Who knew cupcake trays could multitask?!

No-Bake Energy Bites

For all my cooking impaired/ career oriented friends that are looking for a healthy snack at the office… I have found your solution. And it’s certainly better than any lame Cliff Bar!


1 cup oatmeal 1/2 cup peanut butter (or other nut butter) 1/3 cup honey 1 cup coconut flakes 1/2 cup ground flaxseed 1/2 cup mini chocolate chips 1 tsp vanilla

Mix everything above in a medium bowl until thoroughly incorporated.  Let chill in the refrigerator for half an hour.  Once chilled, roll into balls and enjoy!  Store in an airtight container and keep refrigerated for up to 1 week.

Flower Power Eggs

Looking for another way to liven up your breakfast? How about some Flower Power Eggs? I love making these because they are easy, healthy, and have  bell peppers in them.

There’s no recipe, really, just three steps:

1) Cut bell peppers into 1/2 inch rings

2) Place in a non-stick lightly oiled skillet

3) Crack an egg in the middle of each ring and cover and cook over low heat until done.

If you like your yolks runny, just cook over low heat until whites are done. If you like your yolks firm, break the yolks and then cook over low heat until both whites and yolks are firm.

Ice Cream Cone Cupcakes

The pop culture craze of cupcakes has oddly skyrocketed within the past few years…so here’s a cupcake that I don’t see at many cupcake shops and it can be easily made at home!  YUM!



Use any boxed cupcake recipe and ingredients. Place ice cream cones in muffin tins or on cookie sheet and fill each 1/2 full with batter. Bake 20 minutes at 350 degrees F. Frost and decorate when cooled, if desired.

Veev Lemonade

Superfruit Soda Pitcher 

¾ full with ice
½ bottle of VeeV
Fill with club soda
1 ounce fresh lime juice
Blueberries, for garnish

Add all ingrediens to pitcher and then fill with ice. Garnish and stir well before serving. (serves 6)

Veev Lemonade

Açaí Lemonade Pitcher 

½ bottle of VeeV
Fill with lemonade
Top with cranberry juice
6 lemon wheels

Add all ingredients to pitcher and then fill with ice. Garnish and stir well before serving. (serves 6)

Sangria Veev

Sparkling Açaí Sangria Pitcher

¾ full with ice
½ bottle of VeeV
4 ounces St. Germain
4 ounces orange juice
Top with sparkling wine
Fresh fruit, for garnish

Add all ingrediens to pitcher and then fill with ice. Garnish and stir well before serving. (serves 6)
